Corn Ribs
Ingredients
- 3 fresh corn cobs
- 4 tbs olive oil
- 1 tsp lemon pepper
- 1/2 tsp garlic powder
- 1/2 tsp chilli powder
- 1/4 tsp black pepper
- 1/2 tsp smoked paprika
- pinch of salt
- Dipping sauce
- 1/2 c mayonnaise
- 2 tsp chipotle in adobo sauce
- 1/2 – 1 lime juiced
Instructions
- Remove corn from husk and cut off ends, wash and then quarter
- In a bowl whisk together olive oil, lemon pepper, garlic powder, chilli powder, smoked paprika, salt and pepper until combined.
- Brush oil mixture over the corn ribs and place in the air fryer and cook at 200 degress C for 10 minutes or until tender with crispy brown edges.
- Add all dipping sauce ingredients to a small bowl and still until well combined. Drizzle over cooked corn and serve.
