Curried Egg & Vegetable Slice

Ingredients
  

  • 6 Eggs
  • 1 cup Self raising flour
  • 1 cup Grated tasty cheese
  • 1 medium Zuchinni grated excess water squeezed out
  • 1 Onion grated
  • 1 small Sweet potato grated
  • 1 cup Diced bacon or ham
  • I tablespoon Curry powder
  • 1 teaspoon Salt and pepper to taste
  • 1 Tablespoon Aioli to serve

Instructions
 

  • Preheat a fan forced oven to 180 degrees. And line or grease a slice tray
  • Beat together 6 eggs and slowly add in the flour
  • Add bacon, grated Zuchinni, sweet potato, onion and half of the cheese Stir to combine
  • Add curry powder and salt and pepper to taste.
  • Pour into lined/greased tray and top with remaining cheese
  • Bake for 25 minutes. Slice will be ready when it is golden brown and firm to touch.
  • Allow to cool, slice into 12 slices and serve with aioli either warm or chilled. Enjoy!
