Balsamic Roasted Vegetables

Ingredients
  

  • 1/2 red onion chopped
  • 1 large green capsicum chopped
  • 3 large carrots peeled and chopped
  • 1 medium sweet potato chopped into ½” cubes
  • 1 bunch asparagus trimmed and halved
  • 5 tbs olive oil
  • 3 tbs balsamic vinegar
  • 2 tsp sea salt
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1 tsp chili powder
  • 1 tsp oregano

Instructions
 

  • Preheat the oven to 205 c.
  • Place all chopped vegetables in a large casserole dish. Drizzle olive oil, balsamic vinegar, salt, and spices over the vegetables and use your hands to toss everything together until the vegetables are well-coated.
  • Place casserole dish on the center rack of the oven and bake for 55 to 65 minutes, stirring once after 30 minutes.
  • Remove vegetables from the oven and serve hot
