Balsamic Roasted Vegetables

- 1/2 red onion chopped
- 1 large green capsicum chopped
- 3 large carrots peeled and chopped
- 1 medium sweet potato chopped into ½” cubes
- 1 bunch asparagus trimmed and halved
- 5 tbs olive oil
- 3 tbs balsamic vinegar
- 2 tsp sea salt
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1 tsp chili powder
- 1 tsp oregano
Preheat the oven to 205 c.
Place all chopped vegetables in a large casserole dish. Drizzle olive oil, balsamic vinegar, salt, and spices over the vegetables and use your hands to toss everything together until the vegetables are well-coated.
Place casserole dish on the center rack of the oven and bake for 55 to 65 minutes, stirring once after 30 minutes.
Remove vegetables from the oven and serve hot
