Microwave vegetables on high for 8 minutes with 1 1/2 cups of water. Coat a frying pan with cooking spray, brown beef for 5 minutes. Drain excess liquid, add ginger to beef, cook a further 1 minute. Combine coriander, cumin, tumeric, paprika and chilli to meat, cook for 1 minute. Drain vegetables, keeping 1 cup of stock water aside. dissolve stock powder in stock water, add to frying pan with sultanas and diced apple, cook a further 2 minutes. Add vegetables, reduce heat and simmer for 5 minutes. Blend cornflour, essence, and evaporated milk, stir into pan, heat until mixture thickens. Serve with rice, potato or pasta.
