Cauliflower Mash with Sour Cream and Chives

Ingredients
  

  • 1-½ tablespoon Unsalted Butter
  • 1 medium head 5″ to 6″ diameter Cauliflower
  • 1 clove Garlic
  • 1 tablespoon Chives
  • 1 tablespoon grated Parmesan Cheese
  • ¼ cup Sour Cream
  • ¼ teaspoon Salt Sea Salt
  • teaspoon Black Pepper

Instructions
 

  • Dice the cauliflower into florets. Add the florets to a pan of boiling water and simmer until tender. About 5 minutes. Drain the cauliflower and pat dry.
  • Add the cauliflower to a food processor along with the garlic, Parmesan and butter. Season to taste and blend to a mash.
  • Add the sour cream and blend again.
  • Transfer the mash to a serving dish and stir through the chives to serve.
